Re: New Zealand Railways, the Southerner and the Silver Star.
A new booklet available called Railway Refresh in New Zealand discusses these crockery pieces and mentions that the maroon pieces first showed up on the Southerner and later on the Silver Star and Silver Fern etc. The maroon colour was not present in later batches and was used in long distance train buffet cars, like the Southerner, Endeavour and Northerner.
